Savvy Cooking
This week's Savvy Cooking recipe comes to us this weekfrom
FoodandWine.com. It's Green Goddess Chicken Salad. We tried
it and loved it with Kingsford Manor Reserve Sauvignon Blanc, but it
would also work really well with a crisp Domaine Houchart Rosé or a
lighter-style red wine, like Mark West Pinot Noir. Click
here to see the recipe.

"How Savvy Are You?" Answers
You are getting very good at answering these. How did you did last
week? Here are the answers:
Who produces more
Icewine (Eiswein)-Canada or Germany?
Answer:
Even though Icewine (Eiswein) originated in Germany in the eighteenth
century, Canada is able to produce greater volumes of naturally frozen
grapes. This is because Canada's winters are consistently colder
than those of Europe and so they can produce more icewine. (Wonder
how global warming will affect this ratio in years to come?)
You're ordering wine in a restaurant and spy one that is
called "Meritage" and you're not sure what it is. What is
a Meritage?
Answer:
Meritage is actually the legal name for the category of American wines.
They must be made with traditional Bordeaux varietals. Red Meritage must
be Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec.
White Meritage must be Sauvignon Blanc, Muscadelle, Semillon. At least
two different grapes must be used to make the wine. The wine must be made
in the United States from American grapes and be the winery's best
wine. Lastly, no more than 25,000 cases can be produced.
Is "noble rot" a good or a bad thing?
Answer:
Actually, it is a very desirable thing. Noble rot is caused by the
botrytis cinerea fungus and when it infects a vine, the grapes on it
shrivel up. This makes for very concentrated flavors as well as
adding the distinctive flavor of the botrytis. The flavors tend to
be very lush and exotic and sweet. The wines also can be very
expensive.
As always, thanks for your support. We truly appreciate your business.
